Sweet potato pumpkin oven dish is a perfect recipe for every day, when you do not have much time and desire to cook big. I love autumnal dishes from the oven and especially if they involve pumpkin and sweet potato. At the moment I also like to make salads and combine them with beans or starchy vegetables. Somehow I think that nature means well with us. When the days get shorter and the temperatures drop, it offers us especially a lot of orange vegetables, such as pumpkin. Speaking of pumpkins , how many of you have made a spaghetti squash before? I have one here in the kitchen, but have never done anything with it. I look forward to feedback below in the comments.

The preparation of this dish is done in a few and simple steps. Cut the pumpkin and sweet potato into pieces. Add olive oil, curry powder and salt. Mix through and off to the oven. Here the vegetables may now stew until they are nice and soft on the inside and crispy on the outside. In the meantime, I prepare the tahini dressing and wash the lettuce. At the end I make a nice bed of lettuce and add the oven vegetables on top. The tahini dressing is then the highlight and is drizzled over the top.

If you don’t like curry powder, you can always use another spice blend of your choice. I’m thinking, for example, of Italian herbs, shawarma or herbs de Provence. Depending on what you have at home, feel free to try it out and give us feedback.

TIP: Instead of the tahini dressing, a plain yogurt dressing, with some lemon juice, salt, pepper and harissa paste also works.

You can also use your imagination with the salad. I used a green leaf lettuce in the shoot, however you can make up any salad you like. I am thinking, for example, romaine, frisée lettuce, batavia, baby spinach, chicory, oak leaf lettuce, lamb’s lettuce, lollo rosso or dandelion.

TIP: For the final refinement are suitable pumpkin seeds, sesame seeds, sunflower seeds or other seeds of choice.

FOR THE OVEN VEGETABLES:

  • 500 g Sweet potato with peel cut into cubes
  • 500 g Hokkaido squash Stalk removed and cut into slices
  • 15 ml Olive oil
  • 1 tbspn Curry powder
  • ½ tbspn Salt

FOR THE DRESSING:

TO SERVE:

  • 200 g mixed leaf salad of your choice
  • Pumpkin seeds to taste
  • Sesame seeds to taste

Anleitung
 

  • Preheat oven to 200 °C convection (220 °C upper-lower heat) and line a baking sheet with a permanent baking mat or baking paper.

  • FOR THE OVEN VEGETABLES Provide a large bowl, put the pumpkin and sweet potato in it along with olive oil, curry powder and salt. Mix well until vegetables are evenly coated. Spread evenly on baking sheet and place in oven. Bake for 35 minutes.
    500 g Sweet potato, 500 g Hokkaido squash, 15 ml Olive oil, 1 tbspn Curry powder, ½ tbspn Salt

  • In the meantime, prepare the dressing and wash the lettuce.

  • Remove oven vegetables from oven after baking time is up and allow to cool briefly.
  • Divide salad among plates, top with oven vegetables and garnish with tahini dressing. Refine with pumpkin seeds and sesame seeds and enjoy! Best fresh!
