Rice wafers with nutmeats and chocolate are the perfect answer if you are looking for a healthy, vegan and delicious snack. I’ve seen the rice cake variations so often on social media that I really wanted to make my own. The bananas had to be there because it is my very favorite fruit. Chocolate and nut were also at the start, because without it is also kind of boring. After a little fiddling, it turned into these delicious vegan rice cakes, spread with nut puree and topped with bananas and chocolate.

Our snack today is quick and easy made with rice cakes, nut puree, maple syrup and dark vegan chocolate. Quick and easy is also always my motto, as you may have already gotten with if you have been following me for a while. I make the nut puree from hazelnut puree and maple syrup. Carefully melt the dark chocolate over the water bath. Finally, I cut the banana into slices.

Now it’s time to start assembling. I take one rice cake each, spread it with nut puree and put four banana slices on each. On top I drizzle the melted dark vegan chocolate- Once all the waffles are topped, I put them in the fridge and let them set for 30 minutes. Now they are ready to eat and you can take a big bite. I’m sure you agree that these snacks definitely have addictive potential. Or do you see it differently? Then I look forward to a comment at the bottom of the page.

TIP: You can also use any other nut puree instead of hazelnut puree. I am thinking, for example, of almond paste or a mixed nut puree.

Rice cakes are a wonderful base for healthy and vegan snacks and are particularly low in calories with an energy value between 20 and 40 kcal. Especially interesting for people who suffer from celiac disease or prefer a gluten-free diet, because they do not contain gluten.

  • Melt the chocolate carefully over a water bath.
    80 g dark vegan chocolate

  • Place hazelnut puree and maple syrup in a bowl and stir until maple syrup has thickened a bit. Take one rice cake each and spread with the mush. Place four banana slices on each and pour chocolate over the top. Repeat until everything is used up.
