Craving a healthy, naturally sweetened snack? Then these fine date-ginger slices are just the thing for you. Few ingredients, quickly made, soft, nutty and a slight spiciness thanks to ginger. Gluten-free, naturally sweetened, oil-free and vegan.
Preheat oven to 160 degrees convection (180 degrees top-bottom heat) and line with a permanent baking mat or baking paper. Spread almonds and cashews on top and bake for 10 minutes. Remove from the oven and let cool. Line a brownie pan (20x20cm or similar) with baking paper.
200 g Almonds, 75 g Cashews
Provide a blender (preferably with an S-shaped blade, like MagiMix). Add in nuts and grind until a coarse flour is formed. Add in dates, ginger and half of the raisins and blend until a compact paste is formed. At the very end, add the other half of the raisins and mix again briefly until they are integrated into the dough. TIP: I like to have a few coarser pieces of raisins in the dough, but you can also mix everything very finely.
290 g Medjool dates, 3 tbspn grated ginger, 150 g Raisins
Pour the dough into the prepared mold and press it evenly with slightly moistened fingers. Place in refrigerator or freezer and allow to set for at least 2 hours or preferably overnight.
Remove, cut into 12 pieces and enjoy!
Store in the freezer or refrigerator for up to 2 weeks. Enjoy cold!
